How often do you make pizza?
I usually make pizza 3-4 times a week. Neapolitan is my favorite style to make, but I also enjoy pan pizzas, especially Grandma, Detroit and Sicilian style.
What’s your earliest pizza memory?
I've been making pizza and bread for most of my life. One of my earliest memories is helping my Sicilian-born grandfather, Angelo, prepare his pizza and bread dough. He explained the importance of working the dough with care, and included me in the entire cooking process.
What piece of pizza making gear is most important to you?
I couldn’t live without my Ooni Koda 16. It gets amazingly hot, it’s fun, and it’s the best pizza oven you can get for the money.
Who is your biggest pizza inspiration?
My grandfather is my biggest inspiration and I absorbed his passion for great food and high standards. I’m always trying to learn about new techniques, improve my skills and develop lots of new recipes, including sourdough versions of my grandfather’s recipes.
Any advice for people just getting started with home pizza making?
Practice often, try new things, and ask lots of questions!
