Meet Francesco Cirillo - @pizzaaboss

Meet Francesco Cirillo (@francesco__cirillo @bosseatss @pizzaaboss) from New Jersey. He’s only been making pizza for the past couple of years but his pies are coming out top notch!

How did you get into pizza making?
I was stuck home due to COVID and needed something to do to relieve stress. I always loved food and the restaurant industry as we would always help promote restaurants and local businesses through our social media platforms. During the pandemic we were not able to go out much so I decided to do the unthinkable and try making pizza. Pizza I always loved, but I had never thought I would actually make it from scratch! It was a process and a huge learning curve but in the end with motivation from my wife I actually became a pretty decent pizzaiolo! She bought me my first ooni oven and from there I never looked back! Now I try to make pizza every weekend or at least every couple of weekends!

What style do you like making the most and why?
I love making Neapolitan style pizza because it reminds me of my trips to Italy and trying such delicious pizza. I love Neapolitan style because it is easily digestible and simplicity goes a long way. 

What’s one piece of pizza making gear you can’t live without and why?
I would say the scale, without the scale you are prone to epic failure. Pizza making, especially the dough making process is a science and you need to make sure you have the right measurements to get a well executed product!

What advice do you have for aspiring home pizza makers?
JUST DO IT! If you are passionate about it and want to try there is nothing stopping you! It could be intimidating at first and you WON’T succeed in your first try so you can’t be discouraged. Keep practicing and you will also become an awesome at home pizza maker!

Who or what inspires YOU to make great pizza at home?
First my wife, she is the one who actually bought me my first pizza oven because she saw how much I became passionate about it. So passionate that she just surprised me with an awesome birthday gift, a new oven to add to my collection, a Gozney Dome! Scheduled to arrive in October so I can’t wait!! My inspiration is seeing the smile on people’s faces when they try my pizza. It gives me a sense of gratitude to be able to share something that I’ve created from start to finish and see that people enjoy it! I definitely take pride in my pizza and it is now a passion that will last forever. 

What do you do when you’re not making pizza?
Working, playing with my two dogs and going on food adventures with my wife.
