How often do you make pizza?
I make pizza almost every weekend whether it's for friends, family, or myself, but I try to do a pizza sale once a month
How long have you been making pizza?
I started making pizza in 2016 after a birthday trip to Pequod's. I had to recreate the cheese edge!
How do you describe the style(s) of pizza you like to make?
It’s a Detroit Style / Sicilian Pizza hybrid, just because I don't put the sauce on top of all of my pies.
What’s one piece of pizza making gear you can’t live without?
I can’t live without my customized apron made by my girlfriend, but also my Lloyd Pans!
What or who is your pizza inspiration?
I went to Pequod’s in Chicago on my 30th birthday and will never forget my first time having that crispy cheese edge. Also of course the greats, Tony Gemignani, John Arena, Peter Reinhart are huge inspirations.
What advice do you have for a new pizza maker?
Don't be afraid to experiment, but make sure to record the specifics of what you're doing and every time you change something. Just change one thing at a time. My current dough recipe took me almost 5 years to perfect.
